Located in the beautiful village of La Alberca, to the west of Salamanca, Embutidos Fermin is a family owned traditional producer of Spain’s prized Iberico jamon. As the first Spanish producer allowed to export to the US market, Fermin pioneered the introduction of this amazing culinary treasure to the US and offers the highest quality and widest selection of Iberico products available here.

The Iberico pig is the last free ranging and grazing pig in Europe. It is an integral part of the dehesa, a unique ecosystem of oak forest land found in southwestern Spain. Descended from wild boars, it is a heritage breed that naturally stores a high percentage of fat in its in its muscles, producing well marbled rich meat that is highly prized.

Fermin raises Iberico on their own small farms and sources from other small farmers in the local area around La Alberca. The pigs are fed a natural, local diet and for bellota quality free range for fallen acorns for the last part of their life cycle. For generations, Fermin has practiced sustainable, traceable and humane husbandry. With traditional skill and the most modern of facilities, they cure the finest Iberico products available.

Fermin Iberico Jamon is a natural product and cures for up to three years before reaching market. It is rich, full flavored and truly melts in the mouth, the finest ham in the world. It received the 2011 Gold award for Outstanding Meat, Pate, Seafood at the Summer Fancy Food Show in Washington, DC.

In addition, Fermin is the only producer of Serrano jamon to use a true Spanish breed of pig, sourced in the local area from small farms, fed a local diet and cured with the same skill as their famed Iberico products. With over 20 months of aging, it has an amazing flavor and texture that make it the finest quality available.
